Which Bean is Used for Fava?


Fava is not made from fresh broad beans, but from dried and hulled split broad beans. To achieve that signature yellow color and characteristic taste, the highest quality local crops must be selected. When boiled, dried broad beans release their starch, creating that famous "structured yet melt-in-your-mouth" texture.

According to Kepos chefs, there are three fundamental details that distinguish authentic Fava from a simple bean puree:

  1. Onion and Sugar Balance: Caramelizing finely chopped onions during the cooking process and adding a pinch of sugar breaks the natural bitterness of the beans, deepening the flavor.

  2. Extra Virgin Olive Oil: Fava loves olive oil. The oil added during cooking and drizzled on top before serving must be of high quality and cold-pressed.

  3. The Straining Process: For a silky-smooth texture, the boiled beans must be passed through a fine-mesh sieve. A Fava with no lumps is the work of true culinary mastery.
