Deniz Börülcesi (known as Sea Beans or Samphire) is one of the purest, most natural flavors reaching our tables from the coastline. While it may look like a simple green herb at first glance, its intense "sea breeze" and iodine flavor make it the most refreshing companion of a seafood feast.
At Kepos Balık Evi, let’s discover why the sea beans we prepare with loyalty to their nature are so special.
What is Deniz Börülcesi?
Sea beans are plants that grow on shorelines and in salty marshes. Because they feed on sea minerals rather than soil, they possess a natural saltiness and a dense iodine aroma. With its slightly crunchy texture and vibrant green color, it brings immediate freshness to the table.

A Labor of Love: How to Clean Sea Beans?
The joy of eating sea beans is great, but the preparation is meticulous. At the Kepos kitchen, this process is carried out with extreme care:
The Perfect Boil: The beans must be blanched just enough to be tender but without losing their vibrant color or "snap."
De-stringing (The Woody Core): After boiling, the hard inner stems (the skeleton) are pulled out by hand one by one. This is a kitchen task that requires immense patience.
The Ice Bath Shock: The cleaned beans are immediately moved to ice-cold water to "seal" that vivid green hue.
Do You Add Salt to Sea Beans?
This is the most common mistake. Sea beans already store the salt of the ocean within them. Therefore, no extra salt is added during preparation; they are simply blended with garlic, high-quality extra virgin olive oil, and plenty of lemon. The acidity of the lemon balances the natural salt of the plant, creating a perfect harmony.
At Kepos Balık Evi, we also use a special technique to reduce the excess natural salt, resulting in a unique and unforgettable taste that is light on the palate.
Sea Beans at the Rakı Table
Deniz börülcesi is the "breather" of the Rakı table. Between heavy, oily mezes or hot appetizers, a forkful of sea beans refreshes the palate and prepares it for the next flavor. The combination of the anise-heavy Rakı and the plant's iodized taste literally brings the sea to your table.
It remains one of the most refined flavors representing the [Anadolu Meze Culture], with roots stretching back centuries.
